My experience in cooking

My   experience in  cooking…..a part of my  application for  job…..

 

After  serving  40  years …one year as a Sales  representative in vicks.  ..and ..over   32 years as Officer in  a  Public  sector

Bank in  various capacities  I have    experience as   salesman and  a seasoned  banker

 

Now it  is time for   me    to  search  for  some  job  after  my retirement due in June, 2007.My  google  search…etc  through  Naukhri.com/Monsrter  dot.com/Job .com    etc   provide  large  number  of  jobs  in  various  fields/industries  in India  and  abroad.  But   more often that not   the employers requirements range from IT Professionals, Chartered accountants, Cost accountants, Company secretaries, Attorneys,  etc     with   sufficient  experience in the  filed.

 

It was at this point I   have my considered view/opinion  that  I  should    include  my  experience  in  cooking  in all my   applications.

 

I   state hereunder my experience as a cook before marriage and after   marriage.

 

I have no formal   academic training/experience in cooking except  I  can  say  I hail  from  Palghat  which  as  produced  many  cooks, crooks  and  civil  servants.

 

As   family inheritance/legacy I always mention my mother nammammai   Annapoorni   who was a   recognized   very good in cooking throughout her  life  time  by  all  her  contemporaries  and  children  as  well.  Some of her preparations so  tasty  like filter  coffee  keeramolaghoottal  chakkavaratti  pazhavaratti,Urunda  kozhambu,adai,avial,dosai,godhumbu dosai,vella dosai   ,etc   can not  be  copied  by  anybody  till  today.  Of course she has lifetime  experience in  cooking  being the mother/daughter in  law  of  large families.

 

Then  there  were  special  preparations  like  paal   payasam  Aandinuravu, Aayushhomam….vadai,idli,uppittu,  etc  on  Aavani  avittam   and  then  the   ney  paayasam  made  on  the  occasion  of  Bagavthi sevai  etc.Those  days  we  hd  no  gas  stoves  electric   cooker  etc  but  everything   prepared  using  vessel/uruli   using    mannu  aduppu  using  firewood   burring  as  the  heating  source.She  had  capacity  to   make  good  food  and  please  all her  children  and  all relatives   .She  has  left  a  legacy  on some  of  her  a offspring   and  many  of  her  children  aren’t  good  in  cooking…..

 

I had  necessity  to  enter  the area  of    cooking  in  my  personal  interest  and  for  my  survival.  It  was  in   1970  I  was  working  at  Mariammanahalli  in  Karnataka  a  rural  place  with  no  Brahmin hotels  ,  Saravana Bhavan  etc..there.I  had  to  prepare  my  coffee,  food,  etc  and  consume  it  .I had  written a  letter to  our  Sister  Lakshmi   who  had  sent  me   a  long  letter  giving  ideas/clues  in  the  subject  which  I  started  following  systematically. Her  letter was  quite  informative as it  contained  minute  details  like  quantity  of  water   to  be  added  to milk,  the  amount of salt,  chili  powder , etc to be  added  in  making rasam,  sambar,  etc.Initially  I   purchased  necessary  vessels,  tools  like  knife,cheena  chatti,  plate,  vessels  for  making  samabar,  rasam,  etc  and  the  Bharath  Brand  kerosene  stove  along  with   match  box, one  mathu  for  curd  churning.  Also  was  with me  one  filter  coffee  paathram…

 

I followed the instructions given by Lakshmi as  below;

1.In the morning   buy  ¼  liter  cows  milk  not  buffalos  milk  from  the  milkman  in  a vessel

2.Add  half  a  tumbler  of  good  water  to  dilute  it  as  pure  milk  is  dense  and hard  to  digest  etc

3.Boil  water   ..1   cup  in  a  small  vessel…keep  the  idukki  or  say  holder  in   hand  remove  it  from  stove  after  fully  boiled. This  boiled  water  use  only   for  mixing  with  coffee powder    in filter.

4.Put  2  spoons  Robusta  coffee  powder  bought  from  Coffee  board  in  filter  vessel

5.  Add  boiled  water  hot  over  till   and  the  filtered  coffee  powder  decoction  stard  trickling  down

6.Now  boil  the  milk  with  water  already  added

7.Add   decoction  from  filter  to  milk,  add  2  spoons  of  sugar  and  sir  with another  spoon.

7.Coffee  is  ready

Drink  coffee  feel  its  flavour  and  say

Idu  filter  coffee,     Nallayirukku.besh  besh

 

Again  don’t  waste  the  used  coffee  powder  in  filter  instead  add second  dose  of  boiled  water  and  prepare  coffee  as  usual  and  serve  it  to  unwanted  guests  as  it  will  be  of  poorer  taste.

 

Now  it is  the  procedure     for  making   koottan/rasam/  say  samabar.

 

First  get  necessary  vegetables  like  tomato,ladies finger,ptotato,  chembu,pumpkin,drum stick  etc.

Wash  the  vegetables  for  some  like  potato.carrot   remove  the  skin  using   knife.

Thereafer  cut  them  into  smaller  pieces  small enough to  enter  through  the  mouth.

Take  a  vessel  with  ½  liter  of  pour  water

Add  sambar  powder  2  spoons,20mg  of  common  salt.

Keep  the  vessel  on  oven  for   cooking    say  10  minutes  till  the  vegetables  are  fully  cooked.

In the  side  keep   a  small   vessel  with  tamarind  soaked  and  squeezed  in  it  .

While  the  rice  being  cooked  in  cooker  lower  pan  keep  on  the  upper  pan  one  vessel  with  water  and  4  spoons  thuvaram  paruppu  for   cooking.

Before   cooking  of  rice  wash  the  rice,  remove  the  stone add  water  21/2 times  by  volume  the  quantity  of  rice  being  cooked.

Thereafter  add  the  tamarind  juice  to  cooked  vegetable   in  liquid  ,add  the  cooked  thruvam  paruppu,  add   asafetida,  turmeric  powder,  coriander  leaves  and  the    final  work  is  porichukottal…..that  is  frying  in  thengai  ennai   kadugu  and  Ulutam  paruppu   both  very  little  quantity  …add  to  the  total  samabar  under  preparation  and  keep  it  in  aduppu  for  getting  mixed  up  and  make  it  tasty.

 

By  trial  and  error  somehow  I  gained  experience  in the  art  of  cooking  and  making  items  like satham,  coffee,  sambar,  paayasam,avil  uppuma,etc  before  marriage.

 

 After  my  marriage  in  1974  I  got  on  the  job  intensive  training  in  cooking  and  some  of  my  preparations  are:

Filter coffee

Tea

Sambar

Rasam

Sambar

Akkara vadsal

Puliyodarai

Elavadam

Adai;Aviyal

While  I  was  in Quilon  during  2000  I  used  to  add  cashew nut  in  samabar  as cashew nut   was   available  in  plenty  there. It had a special taste  too…although  may  be  banned  now  as  cholesterol.

 

Of curse   I   had  experience  for  another  2  years  in  Bombay  while  I  was  staying  in  Andheri  and  Borivli  adding  up to  my  experience  in  preparing  food.

 

Perhaps   the  experience  I  gained   I  certify  myself  to  be  good   and use a s  a  trump card   as  I  can  always  say  I  know  cooking.  Also  as  and  when my  wife  is  away  from  home I  can  try  my  expertise, cook  good  food  and  taste.

MY    NEW   APPOINTMENT…AFTER RETIREMENT….

 

I retired  from   Bank  of  India  , Coimbatore  as  Senior   Manager   after serving  in Bank  for  39  years  and  serving as   Sales  representative  for    one  year thus  making  my  total  service  40  years. I  am  on the  lookout  for  suitable   openings   after  rertirement.and  am  applying  to  many  prospective  employers.

 

Meantime   today at 5.45 AM  I  was  given  an  on  the  spot  oral  appointment  by  my  spouse   and  I have  joined    duty   today  the  1st July,  2007    inside  house   at    6  AM.

The main terms and conditions of employment are as below:

 

Place:  Presently Coimbatore   but it   will be   anywhere in India or abroad.

Job Area:  Domestic..Pertaining to   family work…

Designation:   House keeper/House Manager/House husband/At tender

(Designation may be interchanged and new designations like  servant,  useless  fellow   may  considered  on merits  based  on unsatisfactory  service)

Main departments:  Getting milk from booth, making coffee by 6  AM  without   wasting  milk,  sugar  and  supplying  to  other  members  of  the  company   in time,

Preparing breakfast  like  uppuma,,rasam chadam,etc   buying   vegetables  from  market  at  cheap rates ,  cutting  them   without  wasting  any  part  of  the  vegetable and  cooking     lunch   breakfast, tea  in  the  evening  4  pm  without  adding   milk, preparing  dinner…only  thayiru  Chatham) In  addition  other   regular  work  like  washing  clothes,  drying,  sweeping  house   twice  daily, cleaning  toilets, dusting  furniture, attending  to   telephone  calls,  taking  care  of  Television,Computer,,etc  being  not  used  more  than  30  minutes  per  day,  opening  /closing  gates,  doors,  windows,  going  to  ration  shop  by  walk,  etc .

Probation:  2 months from DT of joining…may be extended if found necessary applicable

Notice of relinquishment   of   Job:  Not applicable

Lifetime service bond to   be executed by oral submission

Date of retirement: Negotiable but not likely to   be before you are found to do any    domestic work.

EMOLUMENTS:   No monetary compensation…instead   morning coffee after serving the proprietor,  after  noon  lunch  if  anything  is  remaining,  and  night   thayir  chadam.

Working hours:  6  am  to   6  am…24  hours

Holiday:  not presently considered

Perquisites:  Allowed to go and get previous days newspaper  from  neighbors  and  read, allowed  to  visit  general   hospital  for  any  free medical  checkup

Hospitalization   :Not    allowed

Leave:   Not required to be  considered

Note:  Any external  recommendations/consideration  in  service  matters  through  any   other  member  of  the  family  or  outsiders  will  be  deemed  to  be  a  major  misconduct  and  necessary  disciplinary  action  will  be  instituted   against  the  staff

Note:  Depending on  satisfactory  performance  of  duties  assigned  or  unassigned  from  time  to  time  the  candidate  may  be  considered  for  posting  abroad.

Narayan Chithappa's 25th wedding memories...& a poem

Hello Piyers...

I had been to Narayan chitappa and Indra chithi's Silver wedding celebrations..Twas a great time out there at Cincinatti..

I am sure all of U are curious how the function was and what all happened...It was lot of fun out there..The whole pgm was a surprise event organised by divya,nitya,ram and thier frends..Lotsa dance by relatives/Music band performing live for 3 hrs..Believe it or not..Chitthi-Chitappa danced too!!!!Divya,Nitya,their frends and Ram gave a dance performance to assorted Indian film music.They really stole the show..

For all of us kids who had missed the wedding 25 years ago,this seemed to be a replay,with added elements such as "U-may-kiss-the bride!!" scenes..which U udnt have had in the earlier original wedding!!

Of course..the best part is..I had great food for 3 days..after a very very long time(almost an year!!).My partner in the marathon Men's doubles eating event was Sridhar(wow..remember the athirasam n thattai??)) ;-)))!Abhinav kutti was cool n enjoyed..!

A letter from Appa (Parameshwara Iyer)

My  next Chapter…6.8.2006…..

 

I Joined Bank  of  India   Ban galore   on  6.8.1968  and  has thus  completed 38  years  of service in  the  institution  today. In this  connection   I  thought  of  introducing  a  letter  dated  4/5/11.1976  received   by me  from  my  father  containing   various matters and  inter  alia   how  to  be honest in  work  etc. The original letter written  in  his  handwriting  is  held  with  me  and I preserve  it safe  inside the Sundarakakatam Book  of  Anatharama Dikshidhar presented to me by  our  Appa   during  1974  after my  marriage. I  reproduce  hereunder  the  said  letter  typed  verbatim. I  am  sure many  of  piyer members  would  have  letters   from Appa  and  would  feel glad  to  peruse  a  similar  letter.  I  have  seen  him  writing  letters     to  his  sons, son in law, Appesan, Manu Athan,  Appukutti, Mani  Anna,  Chinnamannis  father, Andheri  Ramanathan,etc  and their  relies  too.  He  was  having  good relationship through  correpondence  with   many  persons

Received your and Sow  Radhais letterd 3rd isn't. N goes   tomorrow  to a place   (Kottavattom…Quilon  Dist..10 KM   from Punalur Ry  Station  on metre  gauge line  to work  as Medical  Officer on  Rs.900/+free quarters) in an Hospital  run by   a Co-Operative  Society under  the  Collectors  supervision as it is centrally  sponsored.  He may came  back on  19th  to  write   English  exam  here  on 20th  and  return.  Then  he  might visit  Guruvayoor  either  on his  to or from Madras. He  has  also   to  await the  Tamilnadu  Health  Depts  order if he is selected  as his  interview was over  on  18th  oct.

 

You  need not be  apprehensive of  TCR  transfer. Anyway  you  will  be  transferred and  TCR  is  one  of  the   best  places  in South  India ( Kerala..not unknown  to  us . As you say it may  not be difficult to   get  a suitable  house.  You may  contact  Anathanooo  Atahan (  T.R.Ananathanarayanan,  Adiyat  Madom,Kotttapurom Road,  Trichur  4,kerala )  or  C.R.Balan   and  is  eldest  son   Kasi  (  Electrical  Executive  Engineer)  at their  house  at   Patturakkal a  little  north  of Thiruvambadi  temple  or   R  Hariharan   9Retired  Accounts  Officer)  at  Punkunnam.  He is Chellams husband.  Chellam is  mothers  sister  Amminis   daughter  and  Echakuttys  sister.  Further  there  are Krishna  Athan,Mani Athans  four  sons,( one is  Ganapathy  who works  at  TVS.N.R.Ramachandra  Iyer,Retired Principal near  Ganapthy   Agraharam.  Further  there  PSN  Colony,Neeleswaram Colony.   Better  to get  a  house  at Vadakke  Angadi or Machingal or Mannath  Lane or  near  Chembukkavu  village. All  Brahmin centers  and  near  Vadakkunathan   and Thiruvambadi  temples. Krishna  Periappas daughter  Rasammal  also will be helpful. As in everywhere   now  rent and  cost of living  may  be higher  than 16  years  ago   when  we  left TCR.  You go  first, look  a  suitable house and  after  a week or fortnight  go  back  to Ban galore  and  take  Brindha   who  may  in  the  meanwhile  with  Ss  and  Radhais  help pack well all the essential   things for running  a house hold. Beds, some vessels, all  costly  dresses and  jewels may  be  taken with   you  two personally. All  others may  be  booked  TVS Motors  at  Cantonment   Office to reach  TCR  along  with  or  soon  after  you  reach  it. Some of  the old   Devaswom Peons   (Govindan,Krishankutty,etc)  may  recognize   you once  you  go to  Vadakkunathan  temple or Anthanoo     tell them.Pisharoth House  where  you  were  born and  the  inmates  there all  kindly may  recognize  and  help. Kannan  Devan Venkteswarans relatives also are there.  Dr Sahasranaman who temporarily  is  at  Besant nagar  MIG  70 or 71  has  his  Chithappas  etc at Mannath  Lane. One of them    is Indian  Oil Agent.He may help you get  a Gas Cylinder  easily.   K is asking  Dr Sahasranaman to  write  to   his  people.      Many  other classmates and  others  may  recognize   you  Further  there  is  no water problem.  Take  a house  with  pipe  and  well ( Peechis water)  well  ventilated  and in   Brahmin  Quarters . You  may  get   plenty  veariety   of vegetables,etc  than  at  Madras   Anathanoo  will help you get   a maid  servant,  milk  supplier. Anthanoo is  the   Manager or so of the   Ganapathy  temple behind  Thiruvambadi   and he may  be  influential   in  is  ways.          Also   contact   Thathat  Naryana  Menon   Manger Cochin Chit  Funds, The  Round  Trichur   . He too  retired  as  DC  and  is my best friend and well wisher.

 

Except for Office   use no pants  &  shoes  are  necessary.   For  all domestic calls   outside  as   marketing  etc  dhothi  and  shirt and  chappals  will do.  TCR  is  far  improved.   Triprayar   and Guurvayoor temples are  14  to 20 miles  from Thrissur  and  you can  worship once in  a month on  weekends  or  holidays. I write  straining  for  your  sake.

You have to be very careful with  money.

_________________________________Should not give  loans (     big     especially)  indiscriminately. The public  mainly  Xians are the wealthier   class now  are  either  good  or  bad. Be  careful  and  discreet to move with them. You  have to be thoroughly  honest in your  service  and  devoted  to work. Never quarrel with  superiors and  relatives  or neighbours.8 months  rain.  You may  need  an  umbrella. Climate will suit  you, Novr to Jan-winter-though  cold  may  be far  bearable than  Ban galore.

 

Parents cannot come as my condition  is so bad. I am physically a  wreck  now and have  plenty  of  mental worries   due  to mosltly  bad  health  and   scattered way  of  our family. Mother  too  is  weak.  Thanks to  N  we  are  all  getting  on  some how. Hereafter  God alone  can help us. Sobhana  has  joined  duty  on  1.11.1976  ( N  told  me  N is   giving her  Rs. 250/  out of Rs 500/  she  wanted  for security. now  demanded  in  cash)Others  are well. There is  acute  financial  stringency  here. Cost of living   still mounts  everyday. Income is  going back. Be economical, religious, and God fearing,  Brindha  will  initially  feel  a  little  pout of  water  but  in 2 or 3months   will  feel  happy.  Mother wanted  to know  urgently  whether  L walks  and  is  normal  and  can  come  home  soon. I  got MHKs  letter and  has  sent  Ls horoscope  copy  he  wanted.   S  and  sisters   may   feel  the  separation from you  two  much  as   we  parents   do  here.

These   lines   below  are  written  in the  left side margin  of  the  letter.

Tell  S   that  F   asks  him to be  courageous and  have self confidence. Let him  be  extremely careful in scooter use  and take care of his,Rs.Childs health.  Let  him not feel lonely.

Write in advance to Anthanoo Athan and to us all the   steps you  take  and  programmes then  and  there.
